another name for it is grazing. they use it a lot in danmaku games.Danmaku = shoot'em up with slower bulits but far greater bullet design/patterens.

The boss & background starting at 5:27- awesome.I never played this game, but really enjoyed Guardian Heroes. Seems you can choose your stage in here as well.
