I think it just happens by accident. I used to write music and it was hard to be really sure that the melody you think you just wrote is really yours. Melodies hide in the back of your mind and you have to really double check to make sure you are truly playing your own stuff. Obviously you can't always know that you are borrowing a tune especially if it's deep within your subconscious.
