you take the fat out so the smoke can penetrate better in the rib. what kind of ribs are? st. louis? texas? ...

hey Energi2DmaxX, it ain't raining here! We always keep a few cords around for winter and for Q, and then sawzall up some small pieces for the webers. Now these "little webers" and their WSM water smokers get the job done, often doing a much better Q than the big ol' side boxes. The UFO shaped lids tap into that convection heat physics and that's the trump card on moist and tender barbecue and grilling, all things being equal. bbq pit boys i have done 3 of your recipes...all great,please do some BEEF ribs,i cook them often but i know i could do better,maybe you can help me

Hate to Rain on your cooking but righteous Q don't need sauce, IDK where you get your wood, but where I get mine it don't come chunked or chipped, I gotta cut me a Limb or Tree down. The Moist Wood helps the Meat from drying out. And Also I use Natural Hardwood Charcoal and light it with a "weed torch". You can add it anytime durring cooking, and not have to wait for it to "ash" over. But you are doing a good job with the little webber, I use a offset smoker or Texas smoker. Real awesome stuff!
